Les Dames Host: Chantal Coady, ROCOCO Chocolates

Dame Chantal Coady has spun the last three decades tempering and creating this delicious success story into four shops, five books, one school, a myriad of awards including "Chocolatier of the Year" and an OBE in the Queen's Birthday Honours! She believes that mentoring is the way to pass on her passion.

The successful candidate will follow the story of Rococo from beans to bonbons and for 2 days will shadow the Principal Chocolatier/ Production Manager & team in the kitchen. She will learn about how the beans are selected, working with growers in Grenada, how couture chocolates are designed, how they select flavours to work with specific cocoa beans, the roasting process and much, much more.

She will be able to get hands-on in the kitchen on Day 2 and design her own chocolate flavour.

For the next 2 days, she will shadow owner Chantal Coady, and experience the daily running of the company. She will learn about the marketing and PR side of the business, as well as the retail side. She might meet with larger retail store buyers, meet the staff, as well as experience the more mundane side of ordering and fulfilment. You will also learn how Rococo approaches Special events and shows.

She will be able to spend time in the 'factory', at the Chocolate School on Motcomb Street, at the Chocolate Classroom in Moxon Street and at all three London stores.
On her final day, she will be able to choose a specific area that she'd like to explore further.

The London chapter of Les Dames d'Escoffier will endeavour to arrange accommodations for the week, as hotel prices in London are so high. There will also be a Chapter social organized where the winner can meet and greet some of the other amazing London Dames.
